Takoyaki recipe

☆What you need☆

Ingredients

  • For about 24 pieces
  • Flour--150 g
  • Dashi stock (or water)--300 ml
  • Egg--1
  • Salt--a pinch
  • Boiled tako (octopus)
  • Cabbage
  • Negi (green onions)
  • Benishoga (red pickled ginger)
  • Agedama (tempura crumbs)
  • Katsuobushi (bonito flakes)

  • Takoyaki-ki (griddle)
  • Bowl
  • Whisk
  • Measuring cup
  • Aburahiki (oil applicator)

☆How to cook☆
Prepare batter
  1. Beat egg in bowl.
  2. Add dashi stock and salt to bowl; stir throughly with whisk.
  3. Add flour gradually to bowl; stir thoroughly with whisk.
  4. Pour batter in measuring cup and set aside.
  5. Rest batter in refrigerator or cool place for half a day or longer.
Prepare fillings
  1. Cut boiled tako into 1-centimeter pieces.
  2. Finely chop negi onions, cabbage, and benishoga
  3. Prepare other ingredients you like to add (cheese, mochi rice cake, kimchi, etc.)
Cook on griddle
  1. Heat takoyaki griddle; when hot, coat griddle with oil using applicator.
  2. When griddle is hot enough to smoke, pour ample amount of batter into griddle.
  3. Add fillings to each dumpling on griddle.
  4. Check how they are cooked by turning over dumplings with a pick.
  5. It they are golden brown, continue cooking the other side of dumplings.
